This is one of those dishes that I can’t imagine going without at a holiday gathering. When I think about Christmas, Easter, or Thanksgiving the first thought that pops into my head is definitely all of that deliciously fattening foods (priorities!); and when I imagine that food one of the first dishes that comes to mind absolutely HAS to be my moms famous sweet potato casserole.
The smooth sweet potatoes in this gooey creation are so perfectly complimented by the crunchy sweetness of the pecan and coconut topping that even the most picky eaters (looking at you toddlers and husbands) will be hard pressed to find fault with it. When you combine that with the facts that it only takes about three minutes to throw together, and could be made by even the most inexperienced of chefs it all adds up to the perfect side dish for any family gathering, potluck, or everyday dinner.
Ingredients:
sweet potatoes
- 3 cups- mashed sweet potatoes
- 1 cup- sugar
- 2 eggs
- 1/2 cup- melted butter
- 2 tsp- vanilla
Topping
- 1 cup- brown sugar
- 1 cup- coconut
- 1 cup- chopped pecans
- 1/3 cup- flour
- 1/2 cup- melted butter
Directions:
- preheat oven to 325*F
- mix sweet potato ingredients together well and pour into 8×8 dish
- mix topping ingredients together well and sprinkle on top of sweet potato mixture
- bake for 20-30 minutes
- enjoy!
