This is my husbands favorite recipe (yes a mans favorite recipe is a SALAD! I know!). I make it constantly because its always a huge hit with the kids and honestly one of the few ways I can get them to sit down and eat a salad without complaining throughout the entire meal. I don’t think I have ever had any left over when I’ve made this for a lunch or dinner and the kids usually ask for seconds or thirds. Its also the perfect salad to bring along to holiday dinners or potlucks and can work great as either a main dish or a side. The fact that it only takes like ten minutes to throw together basically makes this recipe just a huge win in my book. Hopefully you agree.
Ingredients:
Salad
- 12oz package of lettuce
- 2 cooked chicken breasts
- 1 package Ramen noodles, uncooked, crushed, and without seasoning
- 1 Tbsp. sesame seeds
- 1/2 cup oven roasted almond accents
Dressing
- 3/4 Tsp. salt
- 3/4 Tsp. pepper
- 1/3 cup vinegar
- 1/3 cup sugar
- 1/3 cup vegetable oil
Directions:
- Cook chicken breasts (I grill them on my George Foreman Grill) then shred them (I put it lightly through my food processor because shredding chicken is a pain!). Mix together cooked chicken, crushed Ramen noodles, almonds, and sesame seeds in large bowl.
- Mix salt, pepper, vinegar, sugar, and vegetable oil in dressing bottle or other small container. Then toss together with salad and serve.
