A slightly new look at an old classic. This meatloaf recipe is moist, flavorful, and perfect for kids because everyone gets their own personal meatloaf. It is also perfect for the single person who eats alone because of its ability to be made ahead and frozen in individual portions.

My favorite part of this recipe is the sauce. Its a delicious mix of sweet and salty that’s a bit different from a traditional meatloaf sauce. It’s always a big hit with my family as everyone wants to pour it on all the rest of their food as well. Because it is so well loved here I do tend to double up on the sauce to make sure everyone is satisfied. Be warned though, the double sauce uses a whole lot of ketchup so stock up 🙂

Ingredients:

Meatloaves 

  • 1/2 cup bread crumb
  • 1/8 tsp pepper
  • 1-1/2 lbs. ground beef
  • 1/2 tsp. salt
  • 1/2 cup milk
  • 2 tbsp. chopped onion

Sauce

  • 1/2 cup ketchup
  • 1/3 cup vinegar
  • 2 tbsp. brown sugar
  • 2 tbsp. chopped onion

(for people who really like a lot of sauce on their food you can double the sauce. I usually do.)

Directions: 

  • Preheat oven to 350F
  • Mix together meatloaf ingredients (beef, milk, onion, pepper, salt, breadcrumbs) and form into about 6 small loaves.
  • Place loaves into glass baking dish.
  • Mix
    sauce ingredients (ketchup, vinegar, brown sugar, onion) in small pot and bring to a boil.
  • Pour sauce over meatloaves.
  • Bake for 1 hour, basting often.
